Lunch Costco chicken Caesar salad
Dinner: rotisserie chicken
Also today: I started some green leafy sprouts.
I made konbudashi-pickled mushrooms. Because we had errands to run, rather than making them the usual way on the stove, I made them in the crockpot. I didn't get a pic of them finished, but here's what they looked like at the beginning.
They turned out really well and are yummy!
Here's the ingredient list. I didn't include any scallions or other onions, and I used ponzu instead of soy sauce or tamari. I also included a dash of mirin (rice wine).
I also packed my lunch for my first day of work tomorrow. I'll post tomorrow about what's in it. 👍
