So I checked in on the jelly that I put into the fridge (without processing) and compared it with the jelly that I processed and were now sitting in my pantry. Here's a video showing the differences:
In the video, you can see that the jars and other containers I use for stuff in the fridge are not canning jars -- because they go right into the fridge and so don't need to be processed and so don't need to be in canning jars.
